Got to check out the preview of my friends’ latest gastronimic endeavor called Easter Coffee Club in D’Olive Eastland Heights, Antipolo. Trixie and Ed Bugia have been teasing their new coffee concept for months and their timing to open a cafe with a rabbit as a logo on Easter Sunday — that’s the poetry.



According to Trixie, she had always wanted to open a concept with a rabbit as logo (it’s super cool!) and they were already doing batch cold brews during the pandemic from their homes. This coffee concept, which is apparently Ed’s man-cave extension from their newly-built home is a product of love and toil for many months.

Chef Ed’s coffee journey began when he was consulting for Bean & Yolk in Westgate, Alabang. The coffee program was designed by Jonathan Choi of Magnum Opus Fine Coffees, and later on Exchange Alley (EACH). Coincidentally, my specialty coffee foundations also came from Jonathan, as I had spent a hefty amount of time at his BF Homes coffee shop while I was on WFH mode during my early days at The Manila Bulletin. I had also finished a barista training course under Jon at EACH many years later when I set up Paper + Cup Coffee at the Intramuros office lobby.

Easter Coffee Club is Chef Ed’s final form in his coffee journey and we were honored to be the first to check out the new space.


Must try: Their ricotta and jam in sourdough. Their jams are made in-house with strawberries directly from farmers in Baguio. For those that want something hefty, they have rice meals as well. Their beef tapa is pickeled so it doesn’t need vinegar.




Easter Coffee Club is open starting 9AM and is located in D’Olive Eastland Heights (the same complex with Chef Resty). Open starting todaty, Easter Sunday.
